Chocolate ganache and raspberry pie: recipe without oven

Simply a box of some well-known cookies and a tablet of a quality pastry chocolate and we can make the rest of our family happy.

This type of cake needs some rest in the fridge to be able to taste itself, in confectionery it is necessary to enjoy and to take the things with patience, nothing to go with haste. As a result, a cake with deep chocolate flavor and an acidic touch of raspberries.

We will start preparing the ganache. For that we melt the two chocolates at short intervals and half power in the microwave, stirring from time to time so they do not burn. Once melted, we reserve.

On the other hand we heat the cream. We are adding it three times to the mixture of melted chocolates and stirring vigorously with a silicone spatula so that the emulsion is made correctly and gives us a silky mixture, without lumps and bright. We reserve the ganache covered with a transparent film stuck to the surface of the cream, for about four hours in a refrigerator until it crystallizes.

For the base, in a grinder or food processor crush the Oreo cookies with their filling, until they form dust. Add the melted butter and stir until it forms a paste. With it we cover the base and the sides of a removable mold or a pastry ring of 18 centimeters in diameter, this better lined inside with acetate tape so that we can later unmold easily.

We chill the dough for an hour in the fridge to lock the butter. Once the time has passed, we put the ganache in the base of cookies and decorate with fresh raspberries and chocolate pearls or pieces of cocoa grue.
