Chicken drumsticks with yogurt and spicy brown rice: easy recipe

Fortunately my level of lactose intolerance allows me to enjoy yogurt thanks to the dairy ferments it contains, and that is one of my basic fridge. To cook simple meats such as chicken or turkey is a great ally, as in this recipe of thighs to yogurt with spicy brown rice.

It could be prepared with another part of the chicken, but the thighs are tastier, and they hold better if we want them to carry in tupper or prepare it in advance. I used a good Greek yogurt to which the liquid drained well, to get a very creamy paste that adds great flavor and texture to the meat when cooked on the grill.

Ingredients

       For 2 persons
  • Chicken thighs without bone and without skin      4
  • Natural Greek yogurt                                                   200 g
  • Extra virgin olive oil                                                     15 ml
  • Worcestershire sauce                                                   2.5 ml
  • Rice or apple or Jerez vinegar                                    ml
  • Salt                                                                                   g
  • Comino ground a pinch to taste
  • Cayenne a pinch
  • Small scallion                                                                  1
  • Cumin beans 1/2 teaspoon
  • Cardamom                                                                       3
  • Black pepper in grain                                                    4
  • Brown rice (a small glass)                                            140 g
  • Vegetable broth 2 and 1/2 measures of rice
  • Extra virgin olive oil
  • Ground black pepper
  • Salt

Bone the chicken drumsticks in case we have bought them with bone, leaving the whole pieces. Remove any excess fat and dry with paper towels. Beat in a bowl the Greek yogurt with oil, Worcestershire sauce, vinegar, salt, cumin, cayenne and a stroke of black pepper. Spread the chicken on all sides and leave to marinate for at least 30 minutes.

Chop the onion in brounoise. Heat a little olive oil in a casserole and add the cardamom, black pepper and cumin. Add the onion quickly and take a few turns. Lower the heat and let it cook until transparent.

Add the rice, stir for a minute and add the water. Salt, bring to a boil, lower the heat and cook for about 20 minutes, or following the package instructions. Heat a little oil in a pan or non-stick plate and cook the chicken without draining the yogurt – although there will be remains on the plate – over a very high heat.

With what to accompany the thighs

Serve the chicken drumsticks to yogurt with spicy brown rice in individual dishes, leaving part of the rice in a small dish so that each diner is added more to your liking. We can remove the cardamom pods and peppercorns before serving, to prevent them from slipping into us without realizing it.
